Setting up a compost system for the University of Nevada, Reno

The UNAE 310 Spring 2009 class project is to put a composting system in place for food services. If anyone has input, advice or ideas we would be very happy to hear them. We are currently beginning the planning stage of this project so this is a very important information gathering time for us. If you have advice about running commercial scale composting systems, about composting here in Northern Nevada or about composting at this university or any other (or other large organizations) please fill us in.
